This is what you should have:
http://www.whatpriceglory.com/shopexd.asp?id=3896&bc=no

Plus you can wear a white (or green/OD) T-shirt under the shirt.

On top of the whole thing a US greatcoat and some normal woolen gloves... greenish/brownish is good.

Jeep cap under the helmet and you can always wear long johns.

For Leg infantry avoid the airborne gloves.

Oh and before the M43 uniform got to the troops they suffered in the cold, mostly...

I'd start underneath - quality thermal underwear and socks then build your layers with pukka visible kit. That jumper Yith linked to looks great (for winter warmth a sleeved pully would be better) - there are plenty of period patterns out there if your girlfriend/wife/mother/grandmother can knit! And don't forget a scarf - I find they are very useful for keeping warm - not just your neck but it stops all the heat rising out of your jacket/greatcoat.

Don't diss the lack of sleeves... :)

If I could find it online I post a wonderful colour photo of a GI wearing that same style of sweater at a street bar in Paris. :)

Sleeves are so an M43/late war thing... ;)

Silly but economical for wool!

You would never want to take your jacket off though - chaps would collapse laughing at you.

Those chest protectors just look like an over the top napkin.

The so called "Tanker" jacket was actually design as the winter combat jacket and is quite warm. I don't know to what extent it was issued to non-armoured troops before the M43 uniform was issued en masse (Late 1944) - after that you were *supposed* to layer the long sleve jumper and/or a pile liner for the M44 jacket, but most had no liners and in the winter campaign you often saw troops wearing their greatcoats over their M41s or M43. Everyone seems to have some sort of scarf, be it issue (red cross volunteers in the US knitted them to the army pattern) or civilian. It was the coldest winter on record after all.

edit - I might have a link to US red cross knitting patterns on another computer, I will find it and post it.
Edit2

http://www.knitheaven.com/vintagepatterns/kyb.htm - Has a pattern for a "muffler" (scarf to you and me).

If you're not fussy about authenticity I swear by good thermals, as Chommers says. I recommend merino such as Icebreaker stuff.
