If you look at period photos, you basically got whatever the QM had in stores and chose to throw at you, so you'll see some remarkably ill-fitted uniforms!
Personally, i'm about the same size, but found size 13 was marginally too small to be comfortable, so went for the larger size and moved the buttons slightly.
the height measure is mainly for the torso/leg length, I'd always assumed, so that the joined in the middle at the right place?
TBH by the time you've found 49 pat in that size (ive not found any in that size for any sensible price in the last five years) and paid what will probably be asked for it you may as well get some repro 37 or 40 pat second hand

Yup, you can get size 13... sometimes... but 16, not much chance. Size 13 will be too short for you. It's too short for me and I'm 5'11".
Just get a repro.
In fairness I've seen some larger BD blouses badged up at shows but never the trousers... but the vendors have always wanted £40+
You could get a new spearhead one for that, i got a 2nd hand Soldier of Fortune one in mint condition for £45 at beltring last year (and it was already badged up as South Staffords - win!)
I'm too lardy for my size 13 these days but even when i could fasten the waist i had to wear it with a wooley pulley or a jerking to hide the fact it was too short (i'm 6'2").

Since you're in Denmark, why don't you get a set of M/44 battledress? If you change the buttoons it looks closer to WWII battledress than '49 pattern.
Bisgaardnielsen.dk has a set in roughly your size for 350 kroner. Failing that try qxl.dk as there's nearly always some on there.

Soldier of Fortune is probably the cheapest really durable BD. The Spearhead stuff is slightly cheaper, but not as accurate or durable.

Well the trousers I think are all sized a bit long and can be taken up. Though I've never bought any 1st hand myself! So just buy the ones that fit your waist.
Much the same for the jacket. The sleeves are usually quite long and could be shortened by a tailor if needed.
If all else fails ring them up or email them. A phone order is best anyway if possible.
Yeah I am aware of the M/44 Uniform. But its completely green (alot greener than Canadian BD) compared to the Brit BD which is much more brown. So I figured that the impression would be too far off and that it would be better buying a set of durable repro (if they exists ).

Is a better bet than this? The p49 requires quite a lot of tailoring work to the collar, plus making a field dressing pocket and moving the leg pocket, but that isn't necessary with the Danish BD_.
This one does look quite green in the photo. The ones I've had have been a spot on match for the British colour.
I'd wear the danish stuff for airsofting anyday, certainly better than 49 pat.
While 49 pat is the right colour and fabric the open collar is a dead giveaway unless you wear a jerking or oversmock of some sort.

I've never seen M/44 in the shade it shows on Bisgaards site, so I'd guess at it being a bad photo. Here is another M/44 blouse on qxl at present it only costs 1kr.

106 is the chest size, but I think the trousers are sized differently to what you'd expect (unfortunately I only have the blouse at present). I'm pretty sure the trousers were sized to match the waist size of the blouse, but as I haven't got the trousers any more I'm not sure (they were way too big for me).
