Im trying to find appropriatte foot wear for a ducth fishmonger 
rubber boots would fullfil the part butu trying to source some that arent just wellies is quite a challenge.
Any information would be apprecciated

Don't worry too much - proper foot protection is much more important. Regular skirmishing boots are fine. 
especially since you're a civie and hence don't have to worry about gaiters or putees!
