Which helmet to go for?
I quite like the look of the M35. There seems to be lots of different colours
field grey and an apple green colour
Which is the best one to get for heer infantry?
I am also looking at getting a uniform:
i like M42 tunic, but which is best M43 etc?
I would quite like a german heer loadout based around d-day Normandy.
Any help would be much appreciated.

Cripes, that's a bit specific - the recommendation is for something early and generalised so you can use it for most games. Apple green would have been OK for Op Ariel but otherwise a field grey M35 would do you fine and is easily obtainable/ubiquitous/iconic.
M35 or M40 - your choice. As regards colour, apple green was early war only. They either used grey or darker green after that.
For a tunic, if you go for M36 or M40, you can represent any era of the war with those. However, it doesn't really matter - apart from the M44 they were quite similar.

Since you asked the question and I happen to be reading a book about D-Day at the moment:
Omaha defended by 716th Coastal Division (mainly Slavs and Poles) but week before D-Day elements of the 352nd Infantry Division (who had seen action on the Eastern Front) were moved up.
Back to 'useful' kit - you won't go far wrong with this (modelled by Steiner himself):

DT - That web site you liked to is a bit shabby colour-wise! The early war colour 'apple green' is distinctly green whereas the later war is darker greyish-green (RAL 6006).
Early M35 helmets weren't dumped of course when helmet designs were revised but were repainted to various later colours. So M35 helmet would not be 'wrong' for all periods of the war whereas M42's would.
A more important aspect is getting the right size (you can always repaint it / add or remove decals, etc. etc). Unlike Brit & Yank lids, the liners are not adjustable and there are a number of different shell sizes. Here is a list that Kermit knocked up some time ago:

60-61 cm - 68cm
62-63 cm - 70cm
As for tunics, the iconic M36 with the bottle green collars works for the whole war.
If you're specifically going for a late war look then an M42 helmet in Ral 6006 with M43 uniform would be more the norm by then. An M42 tunic would also be fine if thats what you prefer.
As others have said though you're limiting youself a far bit by opting for late war only. M35 and M40 helmets were still around in large numbers so would be fine to use and it doesn't matter which as they were both around for nearly the whole war and are near impossible to tell apart unless you a few inches away. An M40 uniform would be a good choice if you don't want the classic early war look that the M36 has but do want the versatility to portray units in early war games.

i'm going to wait till heide's helmets are done that way
i can spray paint it plus put padding in to fit my head and it will
cost less then what you see in other websites

These look OK, but make extra sure that they are selling you the correct shell size for your head size. Underwood does reconditioned originals for £110. ebay.de has no less than 295 stahlhelm available also in various sizes and conditions. The West German fire brigade and army (Feuerwehr / Budeswehr) were still using the basic coal scuttle helmet shape into the 1970s so there may be some billy-bargains around.
I have one of the top ones and its Ok, but not great. The sizing is ok but its not the highest quality out there and the colours aren't quite right. I'd recommend spending a bit more for a better quality one.
The best thing you can do is get to a show where you can try them on and see how good hey are first hand. Failing that go with a proper retailer so at least you can exchange it easily if it doesn't fit.
