Oh yes, plenty of money can be spent.... and then some! Regarding purchasing kit, my advice would be to always check with someone first - this can save you wasting hard-earned cash on items that are either overpriced, of poor quality, or are not necessary for a particular loadout. (For Jerry kit, feel free to PM me.)
A quick word about Landser: we are not as coherant a group as PBI - and at the moment, we do not have the "critical mass" of players on the Axis side that would allow me to pursue and encourage the Landser identitiy without taking from other Axis groups. So, we are simply a group of players who portray members of the Heer (German Army, as opposed to the various Luftwaffe units or Waffen SS). Initially (as you have obviously read), I was pushing for us to attain some sort of coherant identity by portraying the GD, but I myself have now given up on that idea in favour of portraying a Jäger unit. One advantage of this is that Jäger units (elite light infantry) served on all fronts, so to badge up as Jäger allows you to portray any such unit which served in any theatre of WWII. (The GD only served on the eastern front.)
The best advice regarding initial purchases, is to buy a set of wool Feldgrau - tunic and trousers. From there, you can add various bits of kit and insignia to portray what unit you want. (FYI, the Heer did not extensively make use of camouflage - if you study photos of even elite units such as GD, you will be struggling to see any camo items before 1944, and even after that, your basic Landser would nearly always be clad in Feldgrau only.)
Regarding the Lee Enfield, that is perfectly acceptable - all sides used captured weapons.

I would strongly advise against SoF for a lot of German kit - overpriced and not the best quality in some cases.
Take a look at the kit guides at the top of the page. For a one-stop shop that sells pretty much everything you'd need, I'd recommend www.militaria-net.co.uk . If you want to shop around and get your kit over time, you might find some items cheaper elsewhere - but you may have to factor in extra postal prices.
In addition to those items you list, you will need a belt and Heer buckle, and eventually some insignia for the tunic. You might want to consider a breadbag for carrying bits. I would say those are the essentials. Nice-to-have items would be water bottle, Zeltbahn, gas mask cannister, mag pouches, bayonet, spade, cap...etc. The list is almost endless.

I'd definitely recommend Anthony for your Jager stuff, I got 90% of my Major Konig loadout from him (now waiting for a Stalingrad game to use it!).
