You don't want a Thompson Pyle, you need an M1 Garand 
if you've got your UKARA just keep an eye open on here in the sales section, loads of usefull bits in there to get you started with kit and weapons.

2x M1 Garand. You wouldn't be the first couple to both do US Infantry with Garands. 
If you are planning on going to Open Days in WW2 stuff, then an SMG might be handy as well as the Garands. It is a bit depressing on semi-auto vs the box mag M4s.
You can get Garand conversion kits for M14s, you could always leave the full auto option on

as a tall bloke it will be hard to find original kit in your size but there are plenty of company's selling reproduction kit and they are all listed in the kit guide section,usually I'd say borrow as much as you can and get stuck in asap but loan kit in 6 foot plus will also be scarce however there are plenty of people who can lend you a gun so focusing on kit rather than gun may be the answer in you'r case.garands would be best as we always like to lean toward rifles but thompsons are reliable and acceptable especially for american as you don't have to find a 1928 lookalike ,although the mp40 could be a captured weapon unless you plan on going german at a later date it would probably be best to go for an americam gun.
