What's the correct colour sidecap, piping and insignia for a WW2 US Airforce Aircrew/Pilot?

I'll assume that as you are looking at a pilot you are thinking of officer rank?
All army officers wore the same gold/black piping be they air force, tank crew, artillery or Infantry.
Rank was worn on the left front. Airborne wore their distinctive badge on the right.
Colour...Officers could buy their own clothing so there is some little room. The chocolate shade OD#51 or #54 would be the official shades though some guys did wear the EM type in OD serge.

Enlisted would have had the Air force piping. That's dark blue and orange/yellow.

Depends on rank.
Enlisted wore the same as every other enlisted man in the USArmy. So OD wool serge or Mustards are one option. HBTs as suit or overalls for working on aircraft. There are a whole gamut of options for flight clothing depending on role, period and aircraft.
Officers, all kinds of Pinks and Greens. That's why it takes 2 books to cover it.
The more specific you can be the better I can give you a clue.

To tell you the truth, I'm not sure yet. Probably fighter pilot, maybe I should have a little read up in the subject but if I said fighter pilot, Europe, 44 - 45.

Casual. As I said sidecap job, pants, shirt and an aviator jacket? But obviously I need to know more specifically what pants and shirt? I heard a rumour that some US fighter pilots wore Corcorans? Any truth in that?

Its possible but I've never seen them worn with 'bloused' trousers by Air Force personnel.
In casual mode you are more likely to see brown Oxford shoes.
You might see dark shade OD trousers [chocolate] or the pale shade known as Pinks.
You see a variety of jackets worn. Not just the classic A2 leather but B,C and D series sheepskins or the B-10 and later B-15 cotton jacket. The Winter combat jacket known to many as the Tankers jacket was also issued and worn by Airforce crews.
You are going to be an officer so you have a good bit of leeway. Private purchase chinos and the summer weight khaki trousers were also seen.
Can you wear your enlisted mustards? I dont see why not, not as flash as the officer grade pants but a practical option for flight clothing.

I was thinking of my wool trousers but also have some nice khaki chinos so that maybe a good option. I'm just thinking I probably have a lot of the kit I need, I may just need a new sidecap. I wasn't thinking of wearing them bloused, I had just heard of fighter pilots wearing them with zips put in them down the side to facilitate easy on for scrambles.
