I'm pretty sure it's not just my eyesight - I have two M35s from different manufacturers and they are clearly a different shape, although it's difficult to show that in photos.
The darker helmet (Spearhead) seems to have a larger "skirt", and it's at a different angle to the other one (SoF). Which is better / most realistic?

nope there is a difference. My 2 are the similar. One has a higher dome than the other. Guess its down to the manufacturer.
And it would be down to the mould they are using..i bet alot of the moulds are moulds of a mould of a mould.So i would think some were down the line the shape and size will be effected some what.

Yep,i have had a couple of M35 replicas over the years and they can vary in shell shape,airvent types and in the quality of the rolled over rim as well.
Also quite a variation in quality of the liners.
Not sure if i still have it but did have bookmarked a good article with pics discussing the various repro M35s-good and bad.

I would think an 8mm round would go through one of those I know a 30.06 round will go right through it at that kind of range.

Kermit did a post ages ago about getting the correct shell size for your noggin in order to avoid the "I'm wearing a dustbin" or the "I'm wearing a thimble" scenarios. This is the same thing.
