whats the differents between M40 and M36 uniform?

As a basic guide, the number after the M is the approximate year the tunic was available from - so an M40 (for example) would be suitable from 1940-45. As Kermit said, the M36 has bottle green collar, whereas all the others are Feldgrau completely. As the war continued and material became short, so all the pocket pleats etc were phased out, until the M44 arrived which was a complete departure - very short, much like British BD.

is there another place where i can get green gaitors i don't really
want to get them at soldier cost of fortune but may have to if i can't
get them anywhere else

I note you're after a waterbottle too. Noone currently makes a repro one and you're looking at around £50+ for an original one in decent condition. The swedish one is ok as a "counts as" and much cheaper. I believe Sabre Sales sell them for less than a tenner.

Is it safe to drink out of old water bottles? I've always used a plastic one hidden away in a pocket

That depends on its' condition. I always sterilised mine with boiling water and milton fluid.

ok now what's the best weapon for a german?
K98 or mp40, one of them ill get some time in september

A good 98K will cost a bit so I would say go for the 40 for now and mid caps.

MP40 is a very rugged and reliable weapon. Midcaps are not essential - just lots of lo-caps!

MP40s are a lot of fun. You could still use your Thompson or Garand as a captured weapon tho.

Yep, can't go wrong with an MP40 as a starter German gun. Getting a box of midcaps for it actually makes better financial sense than buying a load of locaps.

I assume the green canvas pouches would be ok for both wehrmacht and SS, as i'm putting together am equipment set which i want to be able to use for both, but just changing the belt buckle, as i know the SS tended to use the khaki coloured pouches.

They used what they were issued with, just like the Heer, simple as. You'll find that the colour fades out of the green ones quite nicely once they've got wet a few times.

ok my tunic and trousers came today now just one question
they dont come as grey do they?
they come with a bit of green is that right?
