Much depends on which cap you will wear.
I recommend, Afrikakorps by Robert Kurtz if you want to know about the uniforms and equipment of the DAK.
There was a shortage of some insignia in Africa, plus Officers have some leeway.
They wore standard tropical em type insignia, continental officer grade insignia and local made officer grade.
Look at some pictures, you see all sorts.
If you chose to go with em type eagle I can't recommend Morigis newer 'easy fold' type. They are anything but.
Landser in the USA had the best DAK eagles.
What colour waffenfarbe are you using for infantry?

The reading I have done, whilst not exhaustive, suggests that white was an unusual colour to find in N.Africa.
Much of the 'Infantry' were panzer grenadier as a part of the Panzer divisions or Jaeger so wore light green.
The generic piping was the light blue you see in the chest eagle.
I guess you could read a little about the units involved, find one you fancy and adopt their waffenfarbe. There is plenty of free info on-line about the units.
When sewing the chest eagle, dont forget to overlap the swastika part onto the pocket flap. This was done supposedly because if sewn in the normal position the deeper cut of the lapels on the tropical tunic would obscure the eagle.
A quick google revealed this site;

All very true. When I researched DAK, I found that due to supply issues many of the troops were found to be using their European eppaultess. Supply was always an issue. So you are able to mix and match but I would avoid white if possible. 90th light infantry is a good unit, so green waffenarbe. Good luck, I do miss my Afrika Korps impression.

I've read that DAK troops wore either gaiters, puttees, or nothing with short boots, were the puttees the same as Gebirgsjager ones ?

I've tried wearing low boots with socks, shorts and Germans gaiters and ended up twisting my ankle as they don't provide any ankle support whatsoever (unless you've got really fat ankles). Next time I'm wearing puttees done up good and tight, as the occasional twinge from my ankle 18 months later still reminds me, or maybe 'captured' British anklets. I'll try various combos and see.

Cheers

This is true, while quicker to get off and on than puttees the cloth anklets used in WW2 were mostly pretty crap, less comfortable, less water/dirt resistant, more expensive and no ankle support when compared to puttees. Bit of a step backwards really.

I think I'll be going with my Aussie puttees just wrapped around the ankle, I know our chaps wore them this way so I suspect Germans who adopted puttees probably did the same

I've not seen any photos of DAK troops with puttees. By far the most common thing is not to have gaiters at all, but thread some string through the bottom hem and then gather the bottom of the leg. Many photos show this.

Guess I'll be going with that instead then, even easier! :) While we're on the subject of footwear did they just wear regular grey German socks or did they get anything fancier?

I had a browse of various pictures and yes, both gaiters and puttees seem to be relatively uncommon (although not completely unknown). The drawn in trouser thing seems very common though. Shorts with low boots and socks rolled down over the top also seems common.

I'll have a play around with various combos and see how they feel/look.

I was delighted to find the DAK jackets have belt hook holes, as I didn't bother with webbing Y straps.

They did actually have light brown socks, but I've yet to find anything suitable. Luftwaffe Supplies have some second hand approximations, but I wasn't keen on them.
