my phone is an XDAIIi with keyboard...more PDA than phone....

now to business:
stuffed flank of brisket from 'good eating' (1940, reprint 06)
2 lbs flank
1 lb any root veg
1 stick celery
water
allspice and mace

stuffing- 2 cups breadcrumbs
1 onion or leek
1 tblspn parsley
herbs
1 dried egg
seasoning
a little milk

1make stuffing and add milk.
2. remove inside skin from flank. spread stuffing on meat, roll and tie.
3. place in roasting tin/casserole with sliced veg, spices and water to cover, simmer for 2 hours
to serve cold add .5oz gelatine to 1 gill stock pour over cooled joint and then press btween 2 wetted weighted plates.
when stock is cool skim off fat for cooking and thinken stock for soup with cupful oarmeal and boil for several minutes.

there's much more but this aint new kit acquired....

Ordered a large supply of Beef Jerky from Martin's (The rest of the website name sounds like a gay porn site .)

I can recommend his Red Wine & Black Pepper Jerky. :D

Great re-enactment food

I agree, biltong tastes very good, except for the last bit I tried it was too salty to my taste I guess. What's it made from again? Wildebeast? Karibu? Springbok? Crocodile? ;)
